Avocado Tarter Sauce

This is the perfect blend of tangy traditional tarter sauce but with the elegant creaminess of a fresh avocado. This recipe is great for any seafood. I can't remember the last time I bought tarter sauce. It's easy to make and impressive to serve. Give it a try and tell me what you think.

Fresh, homemade avocado tarter sauce is a perfect pairing with my glazed salmon recipe.

Avocado Tarter Sauce

1 cup mayonnaise

1 ripe avocado

1 tbsp diced onion

2 tsp lemon juice

1-2 tsp salt

1 tbsp dried parsley flakes

1/3 cup dill relish

Place the mayonnaise in a mixing bowl - or if using an immersion blender, use the cup or bowl that comes with the blender. Add avocado, diced onion, lemon juice and salt (to taste) and blend until smooth. If you don't have an immersion blender, just mash the ingredients and stir until very smooth.

Once blended, add the dried parsley flakes and relish and stir to combine.

Garnish with a pinch of dried parsley. Serve right away over your favorite seafood, it will stay fresh in the refrigerator for about a week.

Serves 4 as a condiment.

This is the perfect condiment for any seafood dish. From fish tacos to salmon or scallops, the addition of an avocado elevates tarter sauce to a whole new level. I was inspired to come up with this after enjoying a house-made avocado ranch dressing at a local restaurant. Yay for avocados!
